dandelion mandala

I made this over several hours, breathing in the scent of apple blossoms. Pure bliss.

Violets are very mild. Broad-leaf plantain just tastes green and then suddenly it tastes like mushrooms! Chickweed is my favorite, as it grows profusely in the spring and early summer, self-sows incorrigibly (but is easy to weed out if you don't want it), and has a relatively mild flavor. If you don't eat it all, it also forms a lovely and thick mat, acting as a living mulch. Really great plant.

Everything above-ground! :-) The stems are pretty succulent. I usually break off a big chunk of it (have to be careful not to uproot it), rinse it off, and chop it up finely enough that there aren't long pieces of stem.

Later in the year as it goes to seed the stems become tougher and the whole plant becomes drier, so it's not particularly good to eat. But this time of year it's very tender.
