Both started with fried green peppers and onion, grilled chicken in a dash of olive oil. The jerk chicken got some of the chicken broth and chuncks of pineapple and jerk seasoning my coworker gave me. I also added a little Thyme. The cuban chicken got two cans of rotel fire roasted tomatoes, a can of mexicorn, and a can of low sodium black beans. I added adobo seasoning, garlic, pepper, oinion powder, a dash of mexican chili powder, cumin, and red pepper flakes along with a touch of paprika. I cooked both until the thickened and served with rice.
